WARMING ROOT VEGETABLE SOUP

With Winter nights just around the corner, soup season is in full swing. This hearty soup is comfort food in a bowl and the perfect antidote to wet weather and grey skies. And at 80p per portion this soup is guaranteed to make your purse smile, too.

To make 5 freezable portions you will need an onion, a sweet potato, two carrots, a parsnip and a butternut squash. Chop everything roughly and add to a big pot. Mince two cloves of garlic and add this to the mix. Season with salt, pepper, a generous pinch of chilli flakes and a heaped teaspoon of smoked paprika, before covering with water. Crumble in a stock cube. Simmer on a low heat for around 40 mins or until the veg are soft.

Take the soup off the heat and allow to cool before blitzing with a hand blender or food processor. Enjoy straightaway or portion out for the week's lunches. If you fancy shaking things up, add a dollop of crème fraîche when serving or a handful of parsley or coriander. Then just cosy up and enjoy!
